Can I undo a deletion?+

Are bookmarks updated?+
No — and this is the honest limitation of the tool. Removing pages rewrites the page tree, and the document outline is not re-mapped to the new numbering, so bookmarks may point to the wrong page or to nothing at all. On a report or a scanned bundle this rarely matters; on a 300-page manual with a detailed outline it does, and Adobe Acrobat Pro is the tool that handles it properly.
